Supper Menu #4

To use this plan, look over the meals.  If there is a meal you know your family will not eat, note the letter beside it.  Cross items off the grocery list with that letter beside it.  Take your printed grocery list and cross off any items you already have stocked in your pantry.  Look at the meals and decide if you need any vegetables or bread as sides.  Add those items to your grocery list.  Add your breakfast items, lunch items, and snacks, and your shopping list is complete.

Meatloaf

Meal A

Our favorite meatloaf recipe

1 ½ lb ground beef
¾ c oatmeal
1 c milk
1 egg
1 onion
1 ½ t. salt
½ t dry mustard
¼ t pepper
1 t garlic


Mix all ingredients together. Form into loaf and bake at 350 for about 1 hour. I cook mine in a large roaster pan and place peeled potatoes and carrots around the outside edges of the meatloaf. Usually I add a cup or two of water to the bottom of the pan for ease in cleaning later. Serves 6.


Mexican Chicken from my friend, Bev
Meal B


1 cooked chicken
1 small onion, chopped
8 oz Velveeta
12 oz crushed tortilla chips
1 can cr of mush soup
1 can cream of chkn soup
1 can Rotel tomatoes


I always cook my chicken in a crockpot overnight. In the morning I remove the bones and tear into bite size pieces. Chicken breast meat can be substituted. You'll need about 4 cups of cooked chicken. Layer in 9x13 pan: cooked chicken, chopped onion, sliced Velveeta cheese, and crushed tortilla chips. Pour mixture of the following over the layered ingredients: cream of mush soup, cream of chkn soup, and Rotel tomatoes. Bake at 350 for 30-35 minutes or until bubbly. Serves 8.


Pepperoni Loaf
Meal C


1 lb frzn loaf white bread ready-dough, thawed
12 oz shredded mozzarella
1 pkg pepperoni
1 tsp dry mustard
1 tsp garlic salt
1 tsp pepper
4 tsp Italian seasonings
1 jar spaghetti sauce for dipping


Thaw dough on greased cookie sheet per pkg directions. (I make my own whole wheat bread dough, but I know most people don't make bread.) Spread into a large rectangle. Mix all the spices together, then sprinkle dough with spice mixture. Spread pepperoni over loaf and sprinkle with cheese. Roll loaf up, lengthwise. Pinch ends to seal. Place seam side down. Bake 30 minutes at 350. Serve with warmed spaghetti sauce for dipping. (You can brush the top of the loaf with egg white if desired. I skip this.)


Beef Enchiladas

Meal D

1 lb ground beef, cooked and drained
2 c salsa
10 oz frzn spinach, thawed, drained
2 tsp cumin
½ t salt
8 oz cream cheese, cubed
10 flour tortillas
14 oz can diced tomatoes, drained
8 oz shredded cheddar cheese


Heat in saucepan cooked ground beef, 1 c salsa, spinach, cumin, salt, and cream cheese, until melted. Spoon 1/3 cup filling down center of each tortilla; roll up and place seam down in greased 9x13. Combine tomatoes and remaining 1 c salsa. Spoon over enchiladas. Bake uncovered at 350 for 25 minutes or until hot. Sprinkle with cheddar cheese and heat until melted. Serves 6-8.


Pork Chops and Mushrooms
Meal E


4 boneless pork chops, ½ inch thick
2 medium onions, sliced
4 oz can sliced mushrooms, drained
1 envelope dry onion soup mix
¼ c water
1 can cr of mush soup
Place pork chops in greased slow cooker. Top with onions and mushrooms. Combine soup mix, water, and mushroom soup. Pour over mushrooms and pork chops. Cover. Cook on low 6-8 hours.


Ham n' Beans

Ham n' Beans w/cornbread side
Meal F


ham bone/little bits of ham/or ham hock
2 cups of pinto beans
8 cups water – (3 c. more may be added, after bone is taken out, then cook some more)
1 large onion, chopped
salt to taste
½ t garlic powder
boxed cornbread mix or make from scratch


Wash beans. Put everything in crock pot along with ham bone or ham pieces or ham hock. Start cooking at high the evening before. After it starts cooking, turn to simmer. Cook it all night and the next day until serving time. Remove the bone in the early morning and add more water. Serve with cornbread.
