Supper Menu #3
To use this plan, look over the meals. If there is a meal you know your family will not eat, note the letter beside it. Cross items off the grocery list with that letter beside it. Take your printed grocery list and cross off any items you already have stocked in your pantry. Look at the meals and decide if you need any vegetables or bread as sides. Add those items to your grocery list. Add your breakfast items, lunch items, and snacks, and your shopping list is complete.

Recipe Box #3
White BBQ Chicken
Meal A
6 T Mayo
1 T salt
2 t pepper
2 T sugar
3 T vinegar
1/4 c milk
6 boneless chicken breasts
Combine mayo, salt, pepper, sugar, vinegar, and milk. Pour sauce over chicken in greased baking dish. Cover. Bake at 350 for 45 minutes. (I have done this recipe in the crock pot, and it works well. Just place ingredients in crock pot and cook on low for 8 hours.) Serves 6. Salad, mashed potatoes, and bread rolls are suggested side dishes.
Machetti
Meal B
1 1/2 lbs ground beef
1 small onion, chopped
1 1/2 t garlic powder
8 oz macaroni noodles, cooked
1 can cr of mush soup
1 can tomato soup
1 1/2 c. cubed Velveeta (1/2 lb)
Brown ground beef with onion. Drain fat. Salt and pepper to taste. Boil noodles until tender. Combine all ingredients and pour into greased 9x13. Bake at 350 for 30-35 minutes or until cheese is melted. Can be frozen and then baked later -- but add 15-20 minutes to baking time if baking frozen dish. Serves 8. Green beans and bread and butter make good sides.
Chicken n' Noodles
Meal C
2 qt water
8 chicken bouillon cubes
6 cups uncooked egg noodles (1 bag)
2 cans cr of chkn soup
3-4 cooked chicken breasts, cubed
8 oz sour cream
dried parsley
In large saucepan, bring water and bouillon to boil. Add noodles; cook, uncovered, until tender (about 10 minutes). Do not drain! Add soup and cooked, cubed chicken; heat through. Remove from heat; stir in sour cream. Sprinkle with parsley. Serves 10-12. Can serve with salad on the side.
Sloppy Jo's
Meal D
2 lbs ground beef
1/2 c onion, chopped
3/4 c ketchup
3 T brown sugar
3 T mustard
3 T Worcestershire sauce
1/3 c celery, chopped
1 pkg hamburger buns
In skillet, brown hamburger, onion, and celery. Drain excess fat. Add remaining ingredients and simmer over medium-low heat for 20 minutes. Serve on buns. Serves 8. Suggested sides: baked potato wedges, fresh broccoli and carrots with ranch dressing for dipping.
Chicken Parmesan and Penne
Meal E
1 to 1 1/2 lbs chicken breast
26 oz jar spaghetti sauce
8 oz shredded mozzarella
8 T grated Parmesan
16 oz penne pasta, cooked
Combine sauce and 6 T Parmesan in 9x13 baking dish. Fold in cubed, uncooked chicken. Cover; bake @ 375 for 30 minutes. Uncover. Top with mozzarella and sprinkle with 2 T Parmesan. Return to oven to melt. Serve chicken/sauce over cooked penne. Serves 6-8. Suggested sides: Garlic bread sticks and peas.
Green Chili Burritos
Meal F
2-3 lb pork roast
1 can chopped green chilies
1 onion, chopped
1 1/2 t salt
1 T butter
2 t cumin
1 pkg whole wheat tortilla shells
Cook pork roast in crock pot on high 8-10 hours until it is tender and falls apart. Remove roast from crock pot. Remove any bone or fat. Shred or tear apart the meat. Saute in skillet 1 chopped onion in 1 T. butter. Add green chilies, shredded pork roast, salt and cumin. Heat through. You may need to add some of the pork broth from your crock pot if the meat mixture is too dry. Serve wrapped in whole wheat tortillas. Serves 6-8. Refried beans, chips and salsa make great sides.
